No dessert is complete without chocolate, combined with tangy orange and the great health benefits of Chia Bia chia seeds – this really is a guilt free treat!
For the chia pudding
1 and a half cups of almond milk
A quarter cup of Chia Bia Whole chia seeds
1 tablespoon of raw cacao powder
1/2 teaspoon of vanilla extract
Juice of an orange
1 teaspoon of maples syrup or honey (optional)
A third of a cup of coconut cream
Half a teaspoon of orange blossom water (optional)
1 orange, peeled and cut into segments.
1. Mix the almond milk, Chia Bia chia seeds, raw cacao, vanilla extract and sweetener together in a bowl. Use a fork or a whisk to do this as it’s important that the seeds don’t clump together. Place in the fridge for at least six hours to allow the Chia Bia chia seeds to soak up the liquid. After the first hour, give the mixture a good stir, just to be doubly sure no seeds have clumped together.
2. Before serving, make the orange blossom cream by putting the coconut cream and orange blossom water in a bowl and whisking well.
3. Place the orange segments in a small pan over a medium heat and fry them for about five minutes making sure to turn them regularly so they don’t stick. Cut them into smaller pieces as this makes them easier to eat with the chia pudding.
4. To assemble the dessert, spoon the chocolate chia pudding into the bottom of two serving glasses, spoon the coconut cream on top and top with the orange segments and a sprinkling of raw cacao powder or cacao nibs.
